Method
- Sauté onion, celery, and carrots in butter and olive oil until softened.
- Add garlic and diced chicken; cook until lightly browned.
- Stir in paprika, thyme, salt, pepper, and flour to coat evenly.
- Add chicken broth and potatoes; simmer 15–20 minutes until potatoes are tender.
- Stir in corn and heavy cream; simmer 5–10 minutes more.
- Taste, adjust seasoning, and serve hot with optional toppings.

For extra richness, stir in a pat of butter at the end.
