- Finely chop cooked chicken and add to a mixing bowl.
- Whisk eggs, mayonnaise, garlic, smoked paprika, seasoning salt, and pepper.
- Stir in flour, cheese, and parsley, then mix in the chicken.
- Let mixture rest 5–10 minutes.
- Heat oil in a skillet over medium heat.
- Scoop batter into the skillet and flatten slightly. Cook 3–4 minutes per side until golden.
- Remove and serve warm with dipping sauce.
Notes
For extra crispiness, add 2 tbsp panko crumbs to the mixture.
