Ingredients
  

Chicken Mixture
  • 2 cups cooked chicken finely chopped
  • 2 eggs large
  • 0.5 cup mozzarella cheese shredded
  • 0.25 cup mayonnaise
  • 0.25 cup all-purpose flour
  • 2 cloves garlic minced
  • 0.5 tsp smoked paprika
  • 0.5 tsp seasoning salt
  • 0.25 tsp black pepper
  • 2 tbsp fresh parsley chopped
Frying
  • 2 tbsp cooking oil for frying

Equipment

  • Mixing bowls
  • Baking sheet
  • Wire rack
  • Hand mixer or stand mixer

Method
 

  1. Finely chop cooked chicken and add to a mixing bowl.
  2. Whisk eggs, mayonnaise, garlic, smoked paprika, seasoning salt, and pepper.
  3. Stir in flour, cheese, and parsley, then mix in the chicken.
  4. Let mixture rest 5–10 minutes.
  5. Heat oil in a skillet over medium heat.
  6. Scoop batter into the skillet and flatten slightly. Cook 3–4 minutes per side until golden.
  7. Remove and serve warm with dipping sauce.

Notes

For extra crispiness, add 2 tbsp panko crumbs to the mixture.
