Ingredients
  

Chicken Shawarma
  • 1.5 lb chicken thighs boneless skinless
  • 0.25 cup olive oil
  • 0.5 cup plain yogurt
  • 3 tbsp lemon juice fresh
  • 4 cloves garlic minced
  • 1 tsp cumin
  • 1 tsp coriander
  • 1 tsp paprika
  • 0.5 tsp turmeric
  • 1 tsp salt
Garlic Sauce
  • 6 cloves garlic
  • 1 cup neutral oil
  • 2 tbsp lemon juice
  • 0.5 tsp salt

Equipment

  • Mixing bowls
  • Baking sheet
  • Blender or food processor

Method
 

  1. Mix olive oil, yogurt, lemon juice, garlic, spices, and salt in a bowl.
  2. Coat chicken thoroughly, cover, and marinate for at least 2 hours.
  3. Preheat oven to 425°F (220°C).
  4. Arrange chicken on baking sheet and roast for 25–30 minutes.
  5. Rest chicken, then slice thinly.
  6. Blend garlic and salt, slowly adding oil until creamy.
  7. Add lemon juice to sauce and blend until smooth.
  8. Serve chicken with garlic sauce and desired sides.

Notes

Marinate overnight for deeper flavor.
