Method
- Preheat oven to 350°F (175°C). Lightly grease a 9x13 baking dish and spread a thin layer of enchilada sauce on the bottom.
- Warm tortillas to make them pliable.
- Mix chili with onions, chili powder, and cumin.
- Spread chili mixture inside each tortilla, sprinkle with cheese, and roll tightly.
- Place tortillas seam-side down in the baking dish.
- Pour remaining enchilada sauce over the rolled tortillas and top with more cheese.
- Bake 20–25 minutes until cheese is melted and dish is bubbling.
- Let rest for 10 minutes, garnish with cilantro and green onions, and serve.
Notes
Feel free to use spicy chili or add jalapeños for heat.
