Ingredients
  

Cookie Batter
  • 10 corn or flour tortillas softened
  • 3 cups prepared chili homemade or canned
  • 2 cups shredded cheese cheddar or Mexican blend
  • 2 cups enchilada sauce red
  • 0.5 cup diced onions
  • 1 tsp chili powder
  • 1 tsp ground cumin
  • 1 tbsp olive oil
Filling
  • 0.25 cup fresh cilantro chopped, optional
  • 0.25 cup green onions for topping

Method
 

  1. Preheat oven to 350°F (175°C). Lightly grease a 9x13 baking dish and spread a thin layer of enchilada sauce on the bottom.
  2. Warm tortillas to make them pliable.
  3. Mix chili with onions, chili powder, and cumin.
  4. Spread chili mixture inside each tortilla, sprinkle with cheese, and roll tightly.
  5. Place tortillas seam-side down in the baking dish.
  6. Pour remaining enchilada sauce over the rolled tortillas and top with more cheese.
  7. Bake 20–25 minutes until cheese is melted and dish is bubbling.
  8. Let rest for 10 minutes, garnish with cilantro and green onions, and serve.

Notes

Feel free to use spicy chili or add jalapeños for heat.
