Ingredients
  

Strawberries
  • 20 large strawberries washed and dried
Cheesecake Filling
  • 8 oz cream cheese softened
  • 0.33 cup powdered sugar
  • 1 tsp vanilla extract
  • 2 tbsp heavy cream
Chocolate Coating
  • 1.5 cups semi-sweet chocolate chips
  • 1 tsp coconut oil
Optional Toppings
  • 0.25 cup crushed graham crackers
  • 2 tbsp white chocolate melted
  • 2 tbsp crushed nuts or sprinkles

Equipment

  • Mixing bowls
  • Baking sheet
  • Wire rack
  • Hand mixer or stand mixer

Method
 

  1. Wash strawberries and dry thoroughly.
  2. Cut off stems and hollow centers carefully.
  3. Beat cream cheese, powdered sugar, and vanilla until smooth.
  4. Add heavy cream and beat until fluffy.
  5. Pipe filling into strawberries.
  6. Chill filled strawberries for 10 minutes.
  7. Melt chocolate and coconut oil in short intervals, stirring until smooth.
  8. Dip tops of strawberries into chocolate.
  9. Add toppings before chocolate sets.
  10. Chill until chocolate is firm, then serve.

Notes

Best served within 24 hours. Keep refrigerated.
