Ingredients
  

Crust
  • 2 cups chocolate cookie crumbs
  • 6 tbsp unsalted butter melted
  • 2 tbsp granulated sugar
Filling
  • 24 oz cream cheese softened
  • 1 cup granulated sugar
  • 3 eggs large
  • 0.75 cup sour cream
  • 0.5 cup heavy cream
  • 2 tsp vanilla extract
  • 2 tbsp orange zest
  • 0.33 cup orange juice fresh
  • 6 oz dark chocolate melted
Ganache
  • 4 oz dark chocolate chopped
  • 0.5 cup heavy cream

Equipment

  • Mixing bowls
  • Springform pan
  • Roasting pan for water bath
  • Hand mixer or stand mixer

Method
 

  1. Preheat oven to 325°F (160°C) and bake crust for 10 minutes.
  2. Beat cream cheese until smooth.
  3. Mix in sugar then eggs one at a time.
  4. Blend in sour cream, cream, and vanilla.
  5. Stir in orange zest, juice, and melted chocolate.
  6. Pour filling into crust.
  7. Bake in water bath 55–65 minutes.
  8. Cool gradually then refrigerate at least 4 hours.
  9. Make ganache and spread on top.
  10. Slice and serve.

Notes

For best texture use room temperature ingredients and avoid overmixing.
