Ingredients
  

Chocolate Shell
  • 1.5 cups dark chocolate chopped or chips
  • 1 tsp coconut oil optional
Raspberry Filling
  • 1 cup fresh raspberries
  • 0.25 cup raspberry preserves seedless if preferred
  • 1 tbsp powdered sugar optional
  • 0.5 tsp vanilla extract

Method
 

  1. Melt dark chocolate with coconut oil until smooth.
  2. Spoon chocolate into lined muffin tin and chill to set.
  3. Mash raspberries with preserves, sugar, and vanilla.
  4. Fill chocolate shells with raspberry mixture.
  5. Cover filling with remaining chocolate and chill until firm.
