Method
- Preheat oven to 350°F (175°C) and grease a 9x13-inch baking dish.
- Spread brioche cubes in the baking dish.
- Whisk eggs, milk, cream, sugars, vanilla, cinnamon, and salt until smooth.
- Pour custard over bread and let soak 15–20 minutes.
- Bake 40–50 minutes until golden and just set in the center.
- Melt sugar in saucepan until amber. Stir in butter, then cream, vanilla, and salt.
- Cool pudding slightly and serve with warm caramel sauce.
Notes
Use day-old brioche for best texture. Sauce can be made ahead and reheated.
