Ingredients
  

Roast
  • 3-4 lb beef roast rib or sirloin
  • 4 cloves garlic minced
  • 2 tbsp fresh rosemary chopped
  • 1 tbsp fresh thyme chopped
  • 2 tbsp olive oil
  • 2 tbsp unsalted butter softened
  • 2 tsp salt
  • 1 tsp black pepper

Equipment

  • Roasting pan
  • Meat thermometer
  • Cutting board
  • Sharp carving knife

Method
 

  1. Preheat oven to 450°F (230°C).
  2. Pat roast dry and rub with herb mixture.
  3. Roast at high heat for 20 minutes.
  4. Lower heat to 325°F and continue roasting until desired doneness.
  5. Rest roast for 20 minutes before slicing.
