Method
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- In a medium bowl, whisk together flour, baking powder, and salt.
- In another bowl, cream butter and sugar until light and fluffy using a hand mixer or stand mixer.
- Add the egg, vanilla extract, and peppermint extract. Mix well.
- Gradually mix in dry ingredients until a soft dough forms.
- Fold in crushed peppermint candies using a spatula.
- Scoop dough onto baking sheets, spacing 2 inches apart. Flatten slightly.
- Bake for 10–12 minutes until edges are lightly golden. Cool on wire racks.
Notes
For a bakery-style finish, sprinkle extra peppermint on top before baking.
