Ingredients
  

Pie Filling
  • 2 cups mashed sweet potatoes cooked and peeled
  • 0.5 cup unsalted butter softened
  • 1 cup granulated sugar
  • 0.25 cup brown sugar packed
  • 2 eggs large
  • 1 cup milk or evaporated milk
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 0.5 tsp nutmeg
  • 1 pinch salt
Crust
  • 1 unbaked 9-inch pie crust

Method
 

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, combine mashed sweet potatoes and softened butter; mix until smooth.
  3. Add granulated sugar, brown sugar, and eggs; mix well to combine.
  4. Stir in milk, vanilla extract, cinnamon, nutmeg, and salt until mixture is smooth.
  5. Pour filling into unbaked 9-inch pie crust.
  6. Bake for 50–60 minutes or until center is set and only slightly jiggles.
  7. Cool completely on a wire rack for at least 2 hours before slicing.

Notes

For extra flavor, bake sweet potatoes instead of boiling them.
