Copycat Cracker Barrel Chicken and Dumplings

Ingredients
  

Chicken and Broth
  • 1 whole chicken 3–4 lbs
  • 8 cups water or chicken broth
  • 1 onion halved
  • 2 celery stalks
  • 2 carrots
  • 2 bay leaves
  • salt and pepper to taste
  • 2 tbsp butter
Dumplings
  • 2 cups all-purpose flour
  • 0.5 tsp baking powder
  • 0.5 tsp salt
  • 2 tbsp butter cold, cubed
  • 0.75 cup milk

Equipment

  • Mixing bowls
  • Baking sheet
  • Wire rack
  • Hand mixer or stand mixer

Method
 

  1. Simmer chicken with vegetables and seasonings until tender.
  2. Remove chicken and shred into large pieces.
  3. Strain broth and return to pot with butter.
  4. Combine dry dumpling ingredients and cut in butter.
  5. Add milk to form a dough and roll thin.
  6. Cut into strips and simmer in broth.
  7. Return chicken to pot and heat through.
  8. Season and serve warm.

Notes

For extra creaminess, stir in 1/2 cup heavy cream before serving.
