- Preheat oven to 325°F (160°C) and grease a muffin tin.
- Blend eggs, cottage cheese, milk, salt, pepper, garlic powder, and onion powder until smooth.
- Stir in shredded cheese, vegetables, and meat if using.
- Pour mixture into muffin cups about three-quarters full.
- Place muffin tin in larger baking dish and fill with hot water halfway up sides.
- Bake 25–30 minutes until centers are set.
- Cool slightly, remove from pan, and serve.
Notes
Blend mixture thoroughly for smoothest texture. Store refrigerated up to 4 days or freeze up to 2 months.
