Ingredients
  

Egg Base
  • 6 eggs large
  • 1 cup cottage cheese
  • 0.25 cup milk
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 0.25 tsp garlic powder
  • 0.25 tsp onion powder
Mix-Ins
  • 0.5 cup shredded cheddar cheese
  • 0.5 cup diced bell peppers
  • 0.25 cup chopped spinach
  • 0.25 cup cooked bacon or ham optional

Equipment

  • Blender
  • Mixing bowl
  • Muffin tin
  • Baking dish for water bath

Method
 

  1. Preheat oven to 325°F (160°C) and grease a muffin tin.
  2. Blend eggs, cottage cheese, milk, salt, pepper, garlic powder, and onion powder until smooth.
  3. Stir in shredded cheese, vegetables, and meat if using.
  4. Pour mixture into muffin cups about three-quarters full.
  5. Place muffin tin in larger baking dish and fill with hot water halfway up sides.
  6. Bake 25–30 minutes until centers are set.
  7. Cool slightly, remove from pan, and serve.

Notes

Blend mixture thoroughly for smoothest texture. Store refrigerated up to 4 days or freeze up to 2 months.
