Ingredients
  

Flatbread Dough
  • 1 cup cottage cheese
  • 1 cup all-purpose flour
  • 1 egg large
  • 1 tsp baking powder
  • 0.5 tsp salt
  • 1 tbsp olive oil
Toppings
  • 0.5 cup pizza sauce
  • 0.75 cup mozzarella cheese shredded
  • 0.25 cup pepperoni or vegetables
  • 1 tbsp Parmesan cheese grated

Method
 

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Mix cottage cheese, egg, and olive oil in a bowl until smooth.
  3. Add flour, baking powder, and salt. Stir until a soft dough forms.
  4. Knead gently on a floured surface for about 1 minute.
  5. Roll dough into a 1/4-inch thick flatbread shape.
  6. Prebake crust for 8 minutes until lightly set.
  7. Spread sauce and add toppings.
  8. Bake another 7–10 minutes until cheese melts and edges turn golden.

Notes

Drain cottage cheese if watery for best dough texture. Do not overload toppings.
