Ingredients
  

Cream Layer
  • 2 cups cottage cheese
  • 0.5 cup mascarpone cheese
  • 0.33 cup honey or maple syrup
  • 1 tsp vanilla extract
  • 1 pinch salt
Layers
  • 1.5 cups strong brewed coffee or espresso cooled
  • 24 ladyfinger biscuits
Topping
  • 2 tbsp cocoa powder
  • 0.25 cup dark chocolate shavings optional

Equipment

  • Blender or food processor
  • Mixing bowl
  • Spatula

Method
 

  1. Blend cottage cheese, mascarpone, honey, vanilla, and salt until completely smooth.
  2. Pour coffee into a shallow bowl.
  3. Quickly dip ladyfingers into coffee without soaking.
  4. Arrange dipped ladyfingers in bottom of dish.
  5. Spread half the cream mixture over ladyfingers.
  6. Repeat with another layer of dipped ladyfingers and remaining cream.
  7. Smooth top evenly.
  8. Refrigerate at least 4 hours before serving.
  9. Dust with cocoa powder and garnish before slicing.

Notes

Blend filling thoroughly for smooth texture. Quick dips prevent soggy layers.
