Ingredients
  

Cream Filling
  • 2 cups cottage cheese
  • 1 cup heavy whipping cream
  • 0.5 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 pinch salt
Layers
  • 1 cup espresso or strong coffee cooled
  • 2 tbsp coffee liqueur optional
  • 24 ladyfinger cookies
  • 2 tbsp unsweetened cocoa powder
  • 2 tbsp dark chocolate shavings optional

Equipment

Method
 

  1. Blend cottage cheese until completely smooth.
  2. Whip heavy cream until soft peaks form.
  3. Mix blended cottage cheese, powdered sugar, vanilla, and salt until smooth.
  4. Fold whipped cream into cottage cheese mixture.
  5. Combine espresso and liqueur in a shallow bowl.
  6. Quickly dip ladyfingers into coffee mixture.
  7. Layer soaked ladyfingers and cream mixture in dish.
  8. Repeat layers, chill at least 4 hours, dust cocoa, and serve.

Notes

Blend cottage cheese thoroughly for smoothest texture. Best chilled overnight.
