Ingredients
  

Cowboy Caviar
  • 2 cups black beans drained and rinsed
  • 1.5 cups sweet corn
  • 1 cup cherry tomatoes diced
  • 0.5 cup red bell pepper chopped
  • 0.5 cup green bell pepper chopped
  • 0.25 cup red onion minced
  • 1 jalapeño seeded and diced
  • 1 avocado cubed
  • 0.25 cup fresh cilantro chopped

Method
 

  1. Add black beans, corn, tomatoes, peppers, onion, and jalapeño to a large bowl.
  2. Whisk lime juice, olive oil, vinegar, garlic, and spices in a small bowl.
  3. Pour dressing over vegetables and toss gently to combine.
  4. Fold in avocado just before serving.

Notes

Add avocado just before serving for best texture and color.
