Ingredients
  

  • 2 lb beef chuck cubed
  • 4 large yellow onions sliced
  • 3 tbsp butter
  • 2 tbsp olive oil
  • 3 cloves garlic minced
  • 2 tbsp all-purpose flour
  • 4 cups beef broth
  • 1 tbsp Worcestershire sauce
  • 1 tsp thyme
  • 2 bay leaves
  • 1.5 cups Gruyère cheese shredded

Method
 

  1. Season and sear beef until browned; set aside.
  2. Caramelize onions slowly in butter until golden.
  3. Add garlic and flour; cook briefly.
  4. Deglaze with broth and add seasonings.
  5. Return beef, cover, and simmer until tender.
  6. Top with cheese, cover, and let melt before serving.
