Ingredients
  

Meatloaf
  • 2 lbs ground beef 80/20 recommended
  • 1 onion finely diced
  • 1 green bell pepper finely diced
  • 1 cup crushed buttery crackers Ritz or similar
  • 2 eggs large
  • 0.5 cup milk
  • 0.5 cup ketchup
  • 1 tbsp Worcestershire sauce
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.5 tsp garlic powder
Glaze
  • 0.5 cup ketchup
  • 0.25 cup brown sugar
  • 1 tsp mustard

Equipment

Method
 

  1. Preheat oven to 350°F (175°C). Lightly grease a loaf pan or baking sheet.
  2. Mix eggs, milk, onion, bell pepper, ketchup, and Worcestershire sauce in a bowl.
  3. Stir in crushed crackers, salt, pepper, and garlic powder.
  4. Fold in ground beef gently until just combined.
  5. Shape into a loaf and place in pan.
  6. Whisk ketchup, brown sugar, and mustard for glaze; spread half on loaf.
  7. Bake 55–65 minutes. Add remaining glaze and bake 10 more minutes.
  8. Let rest 10 minutes before slicing.

Notes

Avoid overmixing to keep the meatloaf tender. For extra flavor, use sautéed onion and pepper.
