Ingredients
  

Pastry Base
  • 1 sheet puff pastry thawed
  • 1 egg for egg wash
  • 1 tbsp water
Toppings
  • 4 oz goat cheese softened
  • 0.5 cup cranberry sauce whole berry
  • 1 tbsp honey plus extra for drizzle
  • 1 tsp fresh thyme leaves plus extra for garnish

  • Parchment paper

Method
 

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Roll puff pastry lightly and cut into 24 equal squares.
  3. Place squares on baking sheet and lightly score a smaller square inside each.
  4. Whisk egg and water together and brush edges of pastry squares.
  5. Add a teaspoon of goat cheese to the center of each square.
  6. Top goat cheese with a small spoonful of cranberry sauce.
  7. Bake for 13–16 minutes until puffed and golden brown.
  8. Drizzle with honey, garnish with thyme, and serve warm or at room temperature.

Notes

Keep puff pastry cold for best rise. Do not overfill centers.
