Casserole Base
  • 2 cups corn kernels fresh, frozen, or canned
  • 8 oz cream cheese softened
  • 4 tbsp unsalted butter melted
  • 2 eggs large
  • 0.5 cup granulated sugar
  • 0.5 cup cornmeal
  • 1 tsp baking powder
  • 0.5 tsp salt
  • 1 cup milk

Method
 

  1. Preheat oven to 350°F (175°C) and grease a baking dish.
  2. Beat cream cheese until smooth, then mix in melted butter and sugar.
  3. Add eggs one at a time, mixing well after each addition.
  4. Stir in milk, cornmeal, baking powder, and salt until combined.
  5. Fold in corn kernels and pour mixture into prepared dish.
  6. Bake for 40–45 minutes until set and lightly golden.
  7. Rest for 10 minutes before serving.

Notes

Do not overbake to keep the casserole creamy.
