Ingredients
  

Potato Layers
  • 2.5 lbs potatoes peeled and thinly sliced
  • 3 tbsp unsalted butter
  • 1 onion finely chopped
  • 2 cloves garlic minced
  • 3 tbsp all-purpose flour
  • 2 cups heavy cream
  • 1 cup whole milk
  • 2 cups cheddar cheese shredded
  • 0.5 cup mozzarella cheese shredded

Method
 

  1. Preheat oven to 375°F (190°C) and grease a baking dish.
  2. Melt butter in a saucepan and sauté onion until soft. Add garlic and cook briefly.
  3. Stir in flour and cook for 1 minute.
  4. Whisk in cream and milk, cooking until slightly thickened.
  5. Remove from heat and stir in cheeses and seasonings.
  6. Layer potatoes and sauce in the baking dish.
  7. Cover and bake 40 minutes, then uncover and bake 35 minutes until golden.
