Ingredients
  

  • 12 oz pasta penne or fettuccine
  • 2 chicken breasts sliced
  • 2 cups broccoli florets
  • 1.5 tbsp Cajun seasoning adjust to taste
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 3 cloves garlic minced
  • 1 cup heavy cream
  • 0.5 cup chicken broth
  • 0.75 cup Parmesan cheese grated

Equipment

  • Large pot
  • Large skillet
  • Wooden spoon
  • Colander

Method
 

  1. Cook pasta in salted boiling water. Add broccoli during last 2–3 minutes. Drain and set aside.
  2. Season chicken with Cajun seasoning, salt, and pepper.
  3. Cook chicken in olive oil until golden and cooked through. Remove from skillet.
  4. Melt butter and sauté garlic until fragrant.
  5. Add chicken broth and heavy cream. Simmer until slightly thickened.
  6. Stir in Parmesan until smooth.
  7. Add chicken, pasta, and broccoli back to skillet. Toss to coat.
  8. Simmer briefly, garnish, and serve.

Notes

Adjust Cajun seasoning to control heat level.
