  • 2 chicken breasts boneless, skinless
  • 2 tbsp Cajun seasoning
  • 2 tbsp olive oil
  • 1 onion diced
  • 3 cloves garlic minced
  • 1 red bell pepper sliced
  • 1 green bell pepper sliced
  • 1 cup heavy cream
  • 0.5 cup chicken broth
  • 0.5 cup Parmesan cheese grated

Method
 

  1. Season chicken with Cajun seasoning on both sides.
  2. Heat olive oil in a large skillet and sear chicken until golden and cooked through. Remove and set aside.
  3. In the same skillet, sauté onion, peppers, and garlic until softened.
  4. Add chicken broth, then stir in heavy cream and Parmesan cheese. Simmer until sauce thickens.
  5. Return chicken to skillet and simmer briefly in sauce. Serve hot.

Notes

Adjust Cajun seasoning to control spice level. Serve over rice, pasta, or vegetables.
