Ingredients
  

  • 6 slices bacon chopped
  • 1 medium onion diced
  • 3 cloves garlic minced
  • 2 cups cooked chicken shredded
  • 2 cans white beans drained and rinsed
  • 1 can diced green chiles
  • 3 cups chicken broth
  • 4 oz cream cheese softened
  • 0.5 cup heavy cream
  • 1 cup shredded cheese Monterey Jack or white cheddar

Equipment

  • Large pot or Dutch oven
  • Wooden spoon
  • Cutting board

Method
 

  1. Cook bacon in a large pot until crispy. Remove and set aside.
  2. Sauté onion and garlic in bacon fat until softened.
  3. Add chicken, beans, chiles, broth, and spices. Simmer 20 minutes.
  4. Stir in cream cheese until melted.
  5. Add heavy cream, cheese, and bacon. Simmer 5 minutes and serve.

Notes

Do not boil after adding dairy to maintain a smooth, creamy texture.
