Ingredients
  

Soup Base
  • 2 tbsp olive oil
  • 1 yellow onion diced
  • 3 cloves garlic minced
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 0.5 tsp smoked paprika
  • 3 cups shredded cooked chicken
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup corn
  • 1 cup black beans drained

Equipment

  • Large pot or Dutch oven
  • Wooden spoon
  • Cutting board
  • Knife

Method
 

  1. Heat olive oil in a large pot over medium heat. Add onion and cook until softened.
  2. Stir in garlic and spices, cooking until fragrant.
  3. Add shredded chicken, broth, tomatoes, beans, and corn. Simmer for 15 minutes.
  4. Reduce heat and stir in heavy cream and lime juice.
  5. Serve hot with tortilla strips and desired toppings.

Notes

Do not boil after adding cream to maintain smooth texture.
