Method
- Simmer cranberries, sugar, water, and orange zest until berries burst. Blend and strain to make purée.
- Bloom gelatin in cold water, then dissolve into warm cranberry purée.
- Beat cream cheese with powdered sugar and vanilla until smooth.
- Whip heavy cream to soft peaks.
- Fold cranberry mixture into cream cheese, then gently fold in whipped cream.
- Spoon mousse into cups and refrigerate until set.
Notes
Can be prepared up to 24 hours in advance. Garnish just before serving.
