Ingredients
  

Enchiladas
  • 3 cups cooked shredded chicken
  • 8 flour tortillas
  • 2 cups green enchilada sauce
  • 4 oz cream cheese softened
  • 0.75 cup sour cream
  • 2 cups shredded Monterey Jack cheese
  • 1 cup shredded mozzarella cheese
  • 4 oz diced green chiles
  • 1 small onion diced
  • 2 cloves garlic minced

Method
 

  1. Preheat oven to 375°F (190°C) and grease a baking dish.
  2. Sauté onion in olive oil until soft, then add garlic and cook briefly.
  3. Mix chicken, cream cheese, sour cream, green chiles, onion mixture, and seasonings.
  4. Fill tortillas with chicken mixture and roll tightly.
  5. Arrange enchiladas in baking dish and pour green enchilada sauce over top.
  6. Sprinkle with shredded cheese, cover, and bake 20 minutes.
  7. Uncover and bake an additional 10–15 minutes until bubbly.

Notes

Serve with cilantro, avocado, or lime wedges for added freshness.
