Method
- Whisk sugar, cornstarch, spices, and salt in a saucepan.
- Slowly whisk in milk and cream until smooth.
- Cook over medium heat, whisking constantly, until thickened.
- Temper egg yolks with hot milk mixture, then return to pan.
- Cook until pudding coats the back of a spoon.
- Remove from heat and stir in butter and vanilla.
- Pour into dishes, cover, and chill before serving.
Notes
For extra flavor, add rum extract or freshly grated nutmeg before serving.
