Ingredients
  

Pudding Base
  • 2 cups whole milk
  • 1 cup heavy cream
  • 0.5 cup granulated sugar
  • 3 egg yolks large
  • 3 tbsp cornstarch
  • 2 tbsp unsalted butter
  • 1 tsp vanilla extract
  • 0.5 tsp ground nutmeg
  • 0.25 tsp ground cinnamon
  • 1 pinch salt

Method
 

  1. Whisk sugar, cornstarch, spices, and salt in a saucepan.
  2. Slowly whisk in milk and cream until smooth.
  3. Cook over medium heat, whisking constantly, until thickened.
  4. Temper egg yolks with hot milk mixture, then return to pan.
  5. Cook until pudding coats the back of a spoon.
  6. Remove from heat and stir in butter and vanilla.
  7. Pour into dishes, cover, and chill before serving.

Notes

For extra flavor, add rum extract or freshly grated nutmeg before serving.
