Ingredients
  

Main Dish
  • 4 boneless skinless chicken breasts
  • 2 zucchini sliced
  • 2 tbsp olive oil
  • 3 cloves garlic minced
  • 1 tsp Italian seasoning
  • 0.5 tsp paprika
  • 1 cup heavy cream
  • 0.75 cup parmesan cheese grated
  • 1 lemon zested and juiced
  • 0.5 cup chicken broth
  • 1 tbsp butter

Equipment

Method
 

  1. Season chicken with salt, pepper, paprika, and Italian seasoning.
  2. Heat olive oil in a skillet and sear chicken until golden and cooked through. Remove and set aside.
  3. Add zucchini to the skillet and sauté until tender. Remove and set aside.
  4. Add garlic, chicken broth, cream, parmesan, lemon zest, and lemon juice. Simmer until thickened.
  5. Return chicken and zucchini to skillet and simmer until coated in sauce. Garnish and serve.

Notes

For best results, use freshly grated parmesan and fresh lemon for maximum flavor.
