Pasta Salad
  • 12 oz short pasta rotini or fusilli
  • 3 cups corn kernels grilled or roasted
  • 0.5 cup mayonnaise
  • 0.5 cup sour cream or Mexican crema
  • 1 cup cotija cheese crumbled
  • 0.25 cup red onion diced
  • 0.25 cup fresh cilantro chopped
  • 1 clove garlic minced
  • 1.5 tbsp lime juice fresh
  • 1 tsp chili powder
  • 0.5 tsp smoked paprika

Method
 

  1. Cook pasta in salted boiling water until al dente. Drain and cool.
  2. Prepare corn by grilling, roasting, or thawing if frozen.
  3. Whisk together mayonnaise, sour cream, lime juice, garlic, and spices.
  4. Toss cooled pasta with dressing until evenly coated.
  5. Fold in corn, onion, cilantro, and cotija cheese.
  6. Chill for 30 minutes, garnish, and serve.

Notes

Adjust lime and spice levels to taste. Add protein for a complete meal.
