Ingredients
  

  • 300 g pasta
  • 2 cooked beetroots peeled
  • 2 cloves garlic minced
  • 1 tbsp olive oil
  • 0.75 cup heavy cream
  • 0.5 cup parmesan cheese grated
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Method
 

  1. Cook pasta in salted boiling water until al dente. Reserve pasta water and drain.
  2. Sauté garlic in olive oil until fragrant.
  3. Blend beetroots, cream, garlic, salt, and pepper until smooth.
  4. Heat sauce gently and stir in parmesan until melted.
  5. Toss pasta with sauce, adding pasta water as needed. Serve warm.

Notes

Adjust creaminess with pasta water and balance sweetness with lemon if needed.
