Method
- Preheat oven to 325°F and line a 9x9 baking pan with parchment paper.
- Mix graham crumbs, ground pistachios, sugar, and melted butter until combined.
- Press crust firmly into pan and bake 10 minutes. Cool slightly.
- Beat cream cheese until smooth, then add sugar and mix well.
- Add eggs one at a time, mixing on low speed.
- Blend in sour cream, pistachio paste, vanilla, and salt until smooth.
- Pour filling over crust and spread evenly.
- Bake 35–40 minutes until edges are set and center slightly jiggles.
- Cool gradually, then refrigerate at least 3 hours before slicing into bars.
Notes
For best texture, chill overnight before slicing.
