Ingredients
  

Crust
  • 1.5 cups graham cracker crumbs
  • 0.25 cup ground pistachios
  • 0.33 cup granulated sugar
  • 0.5 cup unsalted butter melted
Filling
  • 16 oz cream cheese softened
  • 0.75 cup granulated sugar
  • 2 eggs large
  • 0.5 cup sour cream
  • 0.33 cup pistachio paste
  • 1 tsp vanilla extract
  • 0.25 tsp salt

Method
 

  1. Preheat oven to 325°F and line a 9x9 baking pan with parchment paper.
  2. Mix graham crumbs, ground pistachios, sugar, and melted butter until combined.
  3. Press crust firmly into pan and bake 10 minutes. Cool slightly.
  4. Beat cream cheese until smooth, then add sugar and mix well.
  5. Add eggs one at a time, mixing on low speed.
  6. Blend in sour cream, pistachio paste, vanilla, and salt until smooth.
  7. Pour filling over crust and spread evenly.
  8. Bake 35–40 minutes until edges are set and center slightly jiggles.
  9. Cool gradually, then refrigerate at least 3 hours before slicing into bars.

Notes

For best texture, chill overnight before slicing.
