Ingredients
  

Chicken Filling
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 1 onion diced
  • 2 cloves garlic minced
  • 2 carrots diced
  • 1 cup frozen peas
  • 2 cups cooked chicken shredded
  • 3 tbsp all-purpose flour
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 0.5 tsp dried thyme
  • 0.5 tsp dried parsley
Biscuits
  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • 0.5 tsp salt
  • 0.5 cup unsalted butter cold, cubed
  • 0.75 cup milk

Method
 

  1. Preheat oven to 400°F (200°C).
  2. Heat butter and oil in a skillet. Cook onion and garlic until soft.
  3. Add carrots, peas, and chicken. Stir to combine.
  4. Sprinkle flour over mixture and cook briefly. Slowly stir in broth and cream.
  5. Season with herbs, salt, and pepper. Simmer until thickened.
  6. Mix biscuit dry ingredients, cut in butter, and stir in milk to form dough.
  7. Drop biscuit dough over filling.
  8. Bake 18–22 minutes until biscuits are golden and cooked through.

Notes

For extra flavor, add shredded cheddar to the biscuit dough or fresh herbs to the filling.
