  • 12 oz pasta
  • 2 tbsp olive oil
  • 2 chicken breasts sliced
  • 3 cloves garlic minced
  • 1 tbsp ginger grated
  • 2 tbsp red curry paste
  • 1 cup coconut milk
  • 2 tbsp peanut butter
  • 1 tbsp soy sauce
  • 1 tbsp honey
  • 1 lime juiced

Method
 

  1. Cook pasta according to package directions and reserve some pasta water.
  2. Season and cook chicken in olive oil until golden and cooked through.
  3. Sauté garlic and ginger, then stir in red curry paste.
  4. Add coconut milk, peanut butter, soy sauce, honey, and lime juice. Simmer.
  5. Return chicken to the pan and add vegetables if using.
  6. Toss cooked pasta with the sauce, adding pasta water as needed.
  7. Garnish and serve warm.

Notes

Adjust spice level to taste and use full-fat coconut milk for the creamiest sauce.
