Ingredients
  

Meatballs
  • 1 lb ground meat chicken, turkey, pork, or beef
  • 2 cloves garlic minced
  • 1 tbsp fresh ginger grated
  • 2 green onions chopped
  • 1 egg
  • 0.5 cup panko breadcrumbs
Curry Sauce
  • 1 tbsp coconut oil
  • 2 tbsp red curry paste
  • 1 can coconut milk full-fat
  • 1 tbsp fish sauce
  • 1 tbsp lime juice fresh

Equipment

  • Mixing bowls
  • Large skillet
  • Wooden spoon

Method
 

  1. Mix all meatball ingredients until just combined and form into balls.
  2. Brown meatballs in coconut oil until golden. Remove from skillet.
  3. Sauté curry paste, garlic, and ginger until fragrant.
  4. Add coconut milk and fish sauce, stirring until smooth.
  5. Return meatballs to sauce and simmer until cooked through.
  6. Finish with lime juice and garnish before serving.

Notes

Adjust spice level by adding chili flakes or extra curry paste.
