Ingredients
  

Custard Base
  • 1 loaf brioche or challah bread sliced
  • 5 eggs large
  • 1 cup heavy cream
  • 1 cup whole milk
  • 0.75 cup granulated sugar
  • 1 tbsp vanilla extract
  • 0.25 tsp salt
Caramel Layer
  • 0.5 cup unsalted butter
  • 1 cup brown sugar packed
  • 2 tbsp corn syrup
Brulee Topping
  • 0.25 cup granulated sugar for topping

Method
 

  1. Melt butter, brown sugar, and corn syrup in saucepan until smooth, then pour into greased baking dish.
  2. Arrange sliced bread evenly over caramel mixture.
  3. Whisk eggs, cream, milk, sugar, vanilla, and salt until combined.
  4. Pour custard over bread and press gently so slices absorb liquid.
  5. Cover and refrigerate overnight.
  6. Preheat oven to 350°F and bake 35–40 minutes until golden and set.
  7. Sprinkle sugar on top and broil or torch until caramelized.
  8. Rest briefly, slice, and serve warm.

Notes

Use day-old bread for best texture and watch closely while caramelizing sugar topping.
