Ingredients
  

Fritter Mixture
  • 2 cups grated zucchini moisture squeezed out
  • 2 cups cooked chicken shredded or finely chopped
  • 2 eggs large
  • 0.5 cup all-purpose flour
  • 0.5 cup parmesan cheese grated
  • 2 green onions sliced
  • 2 cloves garlic minced
  • 1 tsp salt
  • 0.5 tsp black pepper

Method
 

  1. Grate zucchini and squeeze out excess moisture thoroughly.
  2. In a large bowl, mix zucchini, chicken, eggs, flour, cheese, garlic, green onions, salt, and pepper.
  3. Heat oil in a skillet over medium heat.
  4. Scoop fritter mixture into skillet and flatten slightly.
  5. Cook 3–4 minutes per side until golden and crispy.
  6. Transfer to wire rack and serve warm.

Notes

For extra crispiness, avoid overcrowding the pan and ensure zucchini is well-drained.
