Ingredients
  

Chicken
  • 2 lbs chicken breasts or thighs boneless skinless
  • 1 cup dill pickle juice
  • 1 cup buttermilk
  • 1.5 cups all-purpose flour
  • 0.5 cup cornstarch
  • 2 eggs beaten
  • 1.5 cups panko breadcrumbs
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • 0.5 tsp black pepper
  • 1 tsp salt
Creamy Garlic Sauce
  • 3 tbsp unsalted butter
  • 5 cloves garlic minced
  • 1 cup heavy cream
  • 0.5 cup cream cheese softened
  • 0.5 cup parmesan cheese grated
  • 0.5 tsp salt
  • 0.5 tsp black pepper

Equipment

Method
 

  1. Brine chicken in pickle juice and buttermilk for at least 2 hours or overnight.
  2. Prepare breading station with seasoned flour, eggs, and panko breadcrumbs.
  3. Bread chicken: flour, egg, panko. Press coating firmly.
  4. Fry, bake, or air fry chicken until golden and cooked through (165°F internal temp).
  5. Melt butter, sauté garlic, add cream and cream cheese, stir until smooth.
  6. Add parmesan, salt, pepper, and simmer until thick.
  7. Serve crispy chicken drizzled with creamy garlic sauce.

Notes

For extra crunch, double coat the chicken and use panko breadcrumbs.
