- Slice chicken breasts horizontally and pound to even thickness.
- Mix buttermilk, garlic, salt, pepper, and paprika. Marinate chicken 30 minutes.
- Whisk flour, cornstarch, garlic powder, onion powder, salt, pepper, and paprika.
- Whisk eggs and milk in another bowl.
- Coat chicken in flour, then egg wash, then flour again.
- Heat oil to 350°F and fry chicken 4–5 minutes per side until golden and cooked through.
- Drain chicken on wire rack.
- Mix sauce ingredients until smooth.
- Toast buns lightly.
- Assemble sandwiches with sauce, lettuce, chicken, tomato, and pickles.
Notes
For extra crispiness, double dredge chicken and let coating rest 5 minutes before frying.
