Ingredients
  

Chicken
  • 2 chicken breasts boneless skinless
  • 1 cup buttermilk
  • 3 cloves garlic minced
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp paprika
Breading
  • 1.5 cups all-purpose flour
  • 0.5 cup cornstarch
  • 1 tbsp garlic powder
  • 1 tsp onion powder
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp smoked paprika
Egg Wash
  • 2 eggs
  • 2 tbsp milk
Assembly
  • 4 brioche buns
  • 4 leaves lettuce
  • 1 tomato sliced
  • 0.5 cup pickles optional
Garlic Sauce
  • 0.5 cup mayonnaise
  • 2 cloves garlic grated
  • 1 tbsp lemon juice
  • 1 pinch salt

Equipment

  • Mixing bowls

Method
 

  1. Slice chicken breasts horizontally and pound to even thickness.
  2. Mix buttermilk, garlic, salt, pepper, and paprika. Marinate chicken 30 minutes.
  3. Whisk flour, cornstarch, garlic powder, onion powder, salt, pepper, and paprika.
  4. Whisk eggs and milk in another bowl.
  5. Coat chicken in flour, then egg wash, then flour again.
  6. Heat oil to 350°F and fry chicken 4–5 minutes per side until golden and cooked through.
  7. Drain chicken on wire rack.
  8. Mix sauce ingredients until smooth.
  9. Toast buns lightly.
  10. Assemble sandwiches with sauce, lettuce, chicken, tomato, and pickles.

Notes

For extra crispiness, double dredge chicken and let coating rest 5 minutes before frying.
