- Boil gnocchi according to package instructions. Drain and let dry.
- Heat olive oil in a large skillet over medium-high heat.
- Add gnocchi in a single layer and cook undisturbed until golden underneath.
- Stir and continue cooking until crisp on most sides.
- Add garlic and sauté briefly until fragrant.
- Add spinach and cook until wilted.
- Stir in lemon juice, zest, salt, pepper, and chili flakes.
- Remove from heat and sprinkle feta on top.
- Garnish with Parmesan if desired and serve warm.
Notes
Dry gnocchi thoroughly before frying for best crisp texture.
