  • 1 lb potato gnocchi
  • 2 tbsp olive oil
  • 3 cloves garlic minced
  • 5 oz fresh spinach
  • 0.5 cup feta cheese crumbled
  • 1 tbsp lemon juice
  • 1 tsp lemon zest
  • 0.5 tsp red pepper flakes optional
  • salt to taste
  • black pepper to taste
  • 2 tbsp Parmesan cheese optional garnish

Method
 

  1. Boil gnocchi according to package instructions. Drain and let dry.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Add gnocchi in a single layer and cook undisturbed until golden underneath.
  4. Stir and continue cooking until crisp on most sides.
  5. Add garlic and sauté briefly until fragrant.
  6. Add spinach and cook until wilted.
  7. Stir in lemon juice, zest, salt, pepper, and chili flakes.
  8. Remove from heat and sprinkle feta on top.
  9. Garnish with Parmesan if desired and serve warm.

Notes

Dry gnocchi thoroughly before frying for best crisp texture.
