Method
- Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
- Wash, dry, and halve the baby potatoes. Toss with olive oil, salt, and black pepper.
- Spread potatoes in a single layer, cut side down, on the baking sheet.
- Roast for 30–35 minutes, flipping halfway, until golden and crispy.
- Meanwhile, melt butter in a small saucepan. Add garlic and sauté until fragrant. Stir in honey and remove from heat.
- Transfer roasted potatoes to a bowl. Pour honey garlic butter over and toss to coat.
- Garnish with fresh parsley and serve immediately.
Notes
Adjust honey to taste for desired sweetness. Serve immediately for best crispiness.
