Ingredients
  

Potatoes
  • 1.5 lb baby potatoes halved
  • 2 tbsp olive oil
  • 0.75 tsp salt
  • 0.5 tsp black pepper
Honey Garlic Butter
  • 0.25 cup unsalted butter
  • 3 cloves garlic minced
  • 3 tbsp honey
  • 2 tbsp fresh parsley chopped, for garnish

Method
 

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. Wash, dry, and halve the baby potatoes. Toss with olive oil, salt, and black pepper.
  3. Spread potatoes in a single layer, cut side down, on the baking sheet.
  4. Roast for 30–35 minutes, flipping halfway, until golden and crispy.
  5. Meanwhile, melt butter in a small saucepan. Add garlic and sauté until fragrant. Stir in honey and remove from heat.
  6. Transfer roasted potatoes to a bowl. Pour honey garlic butter over and toss to coat.
  7. Garnish with fresh parsley and serve immediately.

Notes

Adjust honey to taste for desired sweetness. Serve immediately for best crispiness.
