Method
- Freeze halved mozzarella sticks for at least 1 hour.
- Prepare bowls of flour, beaten eggs with milk, and seasoned breadcrumbs.
- Coat each stick in flour, then egg, then breadcrumbs.
- Repeat egg and breadcrumb coating for double crust.
- Freeze coated sticks 30–45 minutes.
- Heat oil to 350°F.
- Fry sticks 1–2 minutes until golden.
- Drain on rack and serve hot with marinara.
Notes
Freezing before frying prevents cheese from leaking. Double breading ensures crisp coating.
