Ingredients
  

Egg Rolls
  • 12 egg roll wrappers
  • 2 cups cooked shredded chicken
  • 1 cup black beans drained and rinsed
  • 1 cup corn kernels
  • 0.5 cup red bell pepper diced
  • 1 cup shredded cheese
  • 1 tsp cumin
  • 1 tsp chili powder
Avocado Dip
  • 2 ripe avocados
  • 0.5 cup sour cream
  • 1 tbsp lime juice fresh

Equipment

  • Mixing bowls
  • Skillet or deep pot
  • Wire rack
  • Food processor or blender

Method
 

  1. Mix chicken, beans, corn, peppers, cheese, and spices in a bowl.
  2. Fill and roll egg roll wrappers tightly, sealing edges with water.
  3. Heat oil to 350°F and fry egg rolls until golden and crispy.
  4. Blend avocado dip ingredients until smooth and creamy.
  5. Serve hot egg rolls with avocado dip.

Notes

Can be baked or air-fried for a lighter option.
