  • 500 g potato gnocchi
  • 2 tbsp olive oil
  • 3 cloves garlic minced
  • 5 cups fresh spinach
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 0.5 tsp dried oregano
  • 0.5 lemon zest from half a lemon
  • 1 tbsp lemon juice
  • 0.75 cup feta cheese crumbled
  • 2 tbsp Parmesan cheese optional

Method
 

  1. Heat olive oil in a large skillet over medium heat.
  2. Add gnocchi in a single layer and cook undisturbed until golden and crispy on one side.
  3. Flip gnocchi and continue cooking until crisp on most sides.
  4. Stir in garlic and cook briefly until fragrant.
  5. Add spinach and cook until wilted.
  6. Season with salt, pepper, oregano, and lemon zest.
  7. Drizzle with lemon juice and toss to combine.
  8. Remove from heat, fold in feta, garnish, and serve warm.

Notes

For extra crispiness, avoid overcrowding the pan and cook gnocchi in batches if needed.
