Ingredients
  

  • 2 slices bread
  • 1 cup fresh spinach
  • 4 slices tomato thinly sliced
  • 0.5 cup shredded mozzarella cheese
  • 2 slices cheddar cheese
  • 1 tbsp butter softened
  • 1 tsp olive oil

Equipment

  • Nonstick skillet
  • Spatula
  • Knife

Method
 

  1. Heat olive oil in a skillet and lightly wilt spinach. Set aside.
  2. Butter one side of each bread slice and layer cheese, spinach, and tomato between bread.
  3. Cook sandwich in skillet over medium-low heat until golden and cheese is melted, flipping once.

Notes

For extra crispness, cook low and slow and let the cheese fully melt before flipping.
