Method
- Season chuck roast with salt and pepper on all sides.
- Sear roast in hot olive oil until browned on all sides.
- Place roast in slow cooker with onions, garlic, carrots, and potatoes.
- Mix broth, Worcestershire sauce, tomato paste, herbs, and bay leaves; pour over roast.
- Cook on LOW for 8 hours or until fork-tender.
- Shred beef and serve with vegetables and gravy.
Notes
For thicker gravy, stir in a cornstarch slurry during the last 15 minutes.
