Ingredients
  

  • 3-4 lb beef chuck roast
  • 1 tsp salt
  • 1 tsp black pepper
  • 2 tbsp olive oil
  • 1 yellow onion sliced
  • 4 cloves garlic minced
  • 4 cups baby carrots
  • 1.5 lb baby potatoes
  • 2 cups beef broth
  • 2 tbsp Worcestershire sauce
  • 1 tbsp tomato paste
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 2 bay leaves

  • Large skillet

Method
 

  1. Season chuck roast with salt and pepper on all sides.
  2. Sear roast in hot olive oil until browned on all sides.
  3. Place roast in slow cooker with onions, garlic, carrots, and potatoes.
  4. Mix broth, Worcestershire sauce, tomato paste, herbs, and bay leaves; pour over roast.
  5. Cook on LOW for 8 hours or until fork-tender.
  6. Shred beef and serve with vegetables and gravy.

Notes

For thicker gravy, stir in a cornstarch slurry during the last 15 minutes.
