A tender, juicy, hands-off meatloaf cooked low and slow in the crockpot with a sweet ketchup glaze.

Ingredients
  

Meatloaf
  • 2 lbs ground beef 80/20
  • 1 cup breadcrumbs
  • 1 onion finely diced
  • 2 eggs
  • 0.33 cup ketchup
  • 2 tbsp Worcestershire sauce
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.5 cup milk
Glaze
  • 0.5 cup ketchup
  • 2 tbsp brown sugar
  • 1 tbsp Worcestershire sauce

Equipment

  • Mixing bowls
  • Crockpot
  • Parchment paper
  • Knife

Method
 

  1. Prepare slow cooker with parchment or foil liner.
  2. Mix breadcrumbs and milk; allow to soak.
  3. Combine meatloaf ingredients and mix gently.
  4. Shape into loaf and place in slow cooker.
  5. Mix glaze and spread half on meatloaf.
  6. Cook on low 6–7 hours or high 3–4 hours.
  7. Add remaining glaze during last 30 minutes.
  8. Rest 10 minutes before slicing.

Notes

For extra moisture, add grated carrot or zucchini to the mixture.
