Ingredients
  

Salad
  • 2 large cucumbers thinly sliced
  • 1.5 cups fresh mozzarella balls drained
  • 0.25 cup fresh basil leaves torn
Dressing
  • 3 tbsp olive oil
  • 1 tbsp white wine vinegar or lemon juice
  • 0.5 tsp sea salt to taste
  • 0.25 tsp black pepper

Method
 

  1. Slice cucumbers thinly and place in a large bowl.
  2. Add drained mozzarella balls and torn basil leaves.
  3. In a small bowl whisk olive oil, vinegar, salt, and pepper.
  4. Pour dressing over salad ingredients.
  5. Gently toss until evenly coated.
  6. Taste and adjust seasoning if needed.
  7. Serve immediately or chill briefly before serving.

Notes

Best served fresh. Add tomatoes or olives for variation.
