Ingredients
  

Salad
  • 2 large cucumbers thinly sliced
  • 1.5 cups fresh mozzarella balls halved if large
  • 0.25 cup red onion thinly sliced
  • 0.25 cup fresh basil torn
  • 2 tbsp fresh parsley chopped
Dressing
  • 3 tbsp olive oil
  • 1.5 tbsp lemon juice
  • 1 tsp honey
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Equipment

  • Mixing bowl

  • Whisk

Method
 

  1. Slice cucumbers thinly and place in a large bowl.
  2. Add mozzarella balls, red onion, basil, and parsley.
  3. In a small bowl whisk olive oil, lemon juice, honey, salt, and pepper.
  4. Pour dressing over salad and toss gently to combine.
  5. Taste and adjust seasoning if needed.
  6. Chill briefly or serve immediately.

Notes

Best served fresh. Add dressing just before serving for maximum crispness.
